Healthier Doritos Taco Salad
The hubs loves Doritos taco salad but I wanted a healthier option so I came up with something that is a cross between Doritos taco salad, original taco salad, and santa fe salad. I'm also throwing in a homemade taco seasoning that I came up with a few years ago because of all the junk that is in the packets. It's super easy and it makes a batch so that you can store it and you don't have to mix up new every time you use it.
1 TBSP Chili Powder
1 TSP Garlic Powder
1 TSP Paprika
1/2 TSP Onion Powder
1/4 TSP Salt
1/2 TSP Black Pepper
Mix all ingredients together. Store in air tight container for up to 6 months.
Use 1-2 TBSP per 1 LB of meat.
Organic Blue Corn Tortilla Chips
1 1/2 LBS Ground Turkey (I use 97% fat free)
1 15oz Can of Organic Black Beans
1 15oz Can of Organic Whole Kernel Corn (or you could use fresh corn off the cob)
Shredded Cheese of your choice
1. Brown meat
2. Add taco seasoning and 1/4 cup of water. Let simmer until water is absorbed.
3. Crumble chips onto lettuce.
4. Add meat, black beans, corn, and cheese.
5. Drizzle Catalina dressing on top.
This meal only takes about 15 mins and it will feed 4 adults.
